Amagatay brings together Menorcan heritage, contemporary hospitality and the natural pace of the island. Olive groves, dry stone walls and traces of centuries past shape a hotel designed for quiet mornings, long lunches and evenings that gather around the table. JOSÉ MARÍA BORRÁS
Shapes Amagatay’s culinary vision around origin, generosity and the pleasure of gathering at the table. At SUA, he returns to the essential language of fire, bringing together the tradition of the Basque grill and the character of Menorcan ingredients every Sunday.
CHEF DE CUISINE
LAURA PALAIAKIS
Transforms the island’s produce through precision, technique and sensitivity. Her cooking allows apparently simple ingredients to reveal their full character, from vegetables grown under the Menorcan sun to rice dishes carrying the taste of the sea.

CARLOS RUAU SEGUÍ
Has built a career in hospitality spanning more than three decades, with experience across restaurants, hotels, bar management and dining room direction in Menorca and abroad. At Amagatay, he brings that broad perspective to the guest experience, combining attentive service, team leadership and a particular knowledge of cocktails and local product.
