A journey through Lanzarote, served at the table.
César's gastronomy begins with the energy of eating among volcanoes. The
Atlantic, the kitchen garden, local producers and vineyards grown in volcanic ash shape a
contemporary interpretation of the island

MEET THE TEAM
A kitchen shaped by the Atlantic, the garden and the volcanic character of Lanzarote, supported by the people and produce that define the island.
EXECUTIVE CHEF
GONZALO CALZADILLA
Leads César’s culinary vision with a cuisine that reinterprets Lanzarote through fresh fish, local ingredients, garden produce and contemporary technique. His work is rooted in the island’s landscape, light and identity.
RESTAURANT MANAGER
ISAAC GROBA
Has developed his career around hospitality, gastronomy and wine, with a particular connection to the wines of the Canary Islands. As Maître and Sommelier at César Lanzarote, he combines knowledge and curiosity with a warm, personalised approach, making wine an integral part of the dining experience.
The island behind every plate
At César, gastronomy begins with Lanzarote itself: the Atlantic, the garden, the volcanic soil and the people who work with them. Fresh fish, local ingredients and garden produce shape a cuisine that follows the island’s character with precision and sensitivity.
